This low-calorie and HCG friendly blueberry cobbler reminds us of warm summer days with the family.  Luckily it’s low-calorie & HCG friendly!

Ingredients
Filling
- 2 cups Blueberries, fresh or frozen
- 1/4 tsp Cinnamon
- Pinch of  Nutmeg
- 1/2 tsp Xanthan gum
Crumble
- 2 Eggs, large
- 1/8 tsp Baking powder
- 1/4 cup Coconut oil
- ¼ cup coconut flour
- 2 tablespoons + 1 teaspoon Truvia, or â…“ cup sugar substitute
- 1 tsp Vanilla
- 1/8 tsp Salt
Directions
Pre-heat oven to 400°F.
Combine all the Filling ingredients and pour into a baking dish.Â
Blend together the Crumble (eggs, oil, sweetener, vanilla, and salt). Mix in coconut flour and baking powder until batter is smooth. Spread batter evenly over the filling.
Bake for 25-30 min until top is browned.
Tip: Add a little squeeze of lemon to really take the flavor up a notch!
