Indulge yourself this Valentine’s Day with a romantic 3-course steak, shrimp, asparagus and cheesecake dinner that’s low-calorie but flavor-packed!

Garlic Grilled Asparagus

Ingredients

  • 2 lbs asparagus
  • 8 Cloves of garlic
  • 1 tsp Onion powder
  • 2 tbsp Parsley
  • Black pepper to taste
  • Coarse sea salt to taste
  • Extra virgin olive oil

Directions

  • If desired, cut the ends off the asparagus
  • Heat pan to medium high
  • Drizzle olive oil over asparagus
  • Add seasonings and mix until asparagus is evenly covered in seasons
  • Cook on stove top for about 10 minutes – until preferred doneness
  • Add garlic the last 1-3 minutes

Shrimp & Steak

Ingredients

  • 2 – 3 ounces beef tenderloin steaks
  • 4 jumbo shrimp – I got them directly from the butcher
  • 1 juiced lemon or ¼ cup lemon juice
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp chopped fresh cilantro
  • Fresh cilantro sprigs

Directions

  1. Place meats and shrimp in resealable bags.
  2. In a bowl stir together lime juice, garlic, olive oil, cilantro, 1/4 teaspoon salt and 1/8 teaspoon pepper; pour in a bag; seal. Marinate in refrigerator up to 2 hours, turning occasionally. Drain; discard marinade.
  3. For a charcoal grill, Grill steaks 8 to 10 minutes for medium-rare, turning once. Grill shrimp 2 to 3 minutes per side or until shrimp are opaque.
  4. Place steaks on a platter. Add cilantro sprigs. Place shrimp atop each steak, forming a heart shape. Serve with marinara sauce.

HCG Marinara Sauce

Ingredients

  • 4 Tomatoes
  • 1 tbsp basil
  • 1 cup chicken broth
  • 2 tbsp onion, chopped fine
  • 2 cloves garlic, minced
  • 6 oz tomato paste
  • 1 tsp oregano
  • Salt and pepper to taste
  • Cayenne pepper to taste – if desired

Directions

  1. Chop tomatoes or puree in a food processor for a smoother texture.
  2. Add spices and heat in a saucepan.
  3. Allow to slow cook for 30 minutes to an hour.
  4. Allow the liquid to reduce or add additional water to achieve desired consistency.

Low – Calorie Cheesecake

Cheesecake

Ingredients

  • 2 eggs
  • 2 tsp vanilla
  • 1 & ½ cup plain Greek yogurt
  • ¼  cup stevia or preferred sugar substitute
  • 16 oz fat-free cream cheese, softened
  • 2 tbsp melted butter

Directions

  1. Mix softened cream cheese and yogurt until well combined. Set aside.
  2. Blend eggs, vanilla, butter, and sugar substitute.
  3. Slowing incorporate mixture with the cream cheese and yogurt.
  4. Mix until well blended.
  5. Put into a greased 10″ springform pan and bake in preheated oven at 350 degrees for 35 – 40 minutes.
  6. Refrigerate to thicken.
  7. Add whatever topping you want. – I added strawberries and drizzled dark chocolate
