With summer just around the corner, we can’t help but dream of beautiful and calm summer evenings. Bring on the sun-kissed shoulders, light that stretches late, and cool evenings with simply grilled dinners paired with a light salad. Like this one. It’s incredibly easy to make and tastes divine!

2 cooked Chicken breasts
½ pound Asparagus
½ tsp Sea salt
¼ tsp Ground pepper
3 cups Salad greens1/4 cup Blueberries
1/4 cup Favorite nuts (cashews or hazelnuts!)
1/4 cup Feta cheese

Your favorite balsamic vinaigrette dressing


  1. Cook your chicken however you like. We used rotisserie chicken for our salad.
  2. If desired slightly grill asparagus.
  3. Pile everything into your bowl & drizzle your vinaigrette on top.
  4. Eat. How easy what that?!
