HCG approved Apple Cucumber salad that is refreshing and full of flavor. I like this salad in the middle of the day to give you a boost and awaken your senses.
INGREDIENTS
1 small apple, thinly sliced
1/2 cucumber, peeled
2 leaves fresh mint, chopped
1/2 lemon, juiced
Splenda to taste
DIRECTIONS
1) Place apples and cucumbers in a small bowl and sprinkle with mint.
2) Mix lemon juice and splenda and pour over salad.
Makes 1 serving.
