Ingredients
4 Tbsp fat of choice (I used Olive Oil)
1 yellow onion, diced
3 cup parsnip, peeled and diced into 1/2″ cubes
4 carrots, diced
4 stalks celery, diced
1 15oz. can diced tomatoes
4 cup beef bone broth
2 lbs grass-fed stew beef
2 tsp herbes de Provence
2 tsp garlic powder
1 tsp white pepper
¾ cup frozen green peas
Instructions
Press the Saute button on the Instant Pot and heat your fat of choice.
Turn on Saute setting, as you chop up the veggies, throw them into the Instant Pot. Add the onion, parsnip, carrots, celery and frozen peas. Add the stew and saute for a total of 10 minutes, stirring occasionally.
Next, pour in the bone broth, canned tomatoes, and spices.
Place the lid on the Instant Pot, check the seal, and make sure the vent is closed. Press the Beef/Stew setting for 10 minutes.
