MD Diet Recipe Steak Salad with salsa verde vinaigrette

Ingredients for this MD Diet Recipe! 

Cooking spray 

1 (8-oz.) sirloin steak 

1/2 teaspoon kosher salt, divided 

1/4 teaspoon black pepper 

1/4 cup olive oil 

2 tablespoons finely chopped fresh  

flat-leaf parsley 

1 1/2 tablespoons white wine vinegar 

1 tablespoon capers, finely chopped 

1 teaspoon minced garlic 

1/4 teaspoon crushed red pepper 

5 cups arugula (about 5 oz.) 

1/2 cup thinly sliced red onion 

1 ounce shaved fresh Parmesan cheese (about 1/4 cup) 

 

The Directions 

  1. Heat a skillet over medium-high. Coat pan with cooking spray. Sprinkle steak with 1/4  teaspoon salt and black pepper. Add steak to pan; cook 4 to 5 minutes on each side for medium-rare or until desired degree of doneness. Place steak on a cutting board; let stand 5 minutes. Cut across the grain into thin slices. 
  2. Place remaining 1/4 teaspoon salt, oil, parsley, vinegar, capers, garlic, and crushed red pepper in a bowl, stirring with a whisk. Divide arugula evenly among 4 plates. Top evenly with steak, onion, and cheese. Drizzle evenly with oil mixture.
