1 (8-oz.) sirloin steakÂ
1/2 teaspoon kosher salt, dividedÂ
1/4 teaspoon black pepperÂ
1/4 cup olive oilÂ
2 tablespoons finely chopped fresh Â
flat-leaf parsleyÂ
1 1/2 tablespoons white wine vinegarÂ
1 tablespoon capers, finely choppedÂ
1 teaspoon minced garlicÂ
1/4 teaspoon crushed red pepperÂ
5 cups arugula (about 5 oz.)Â
1/2 cup thinly sliced red onionÂ
1 ounce shaved fresh Parmesan cheese (about 1/4 cup)Â
The DirectionsÂ
- Heat a skillet over medium-high. Coat pan with cooking spray. Sprinkle steak with 1/4Â teaspoon salt and black pepper. Add steak to pan; cook 4 to 5 minutes on each side for medium-rare or until desired degree of doneness. Place steak on a cutting board; let stand 5 minutes. Cut across the grain into thin slices.Â
