This omelet not only tastes good, it’s really filling even though it’s only 120 calories


6 egg whites or ¼ cup egg white substitute    

2 Tbsp minced red or green pepper

2 Tbsp minced fresh tomato

1 Tbsp minced mushroom

1 tsp minced onion

3 Tbsp salsa

1 Tbsp light sour cream


Prepare vegetables. In a medium bowl, combine the egg white or substitute, bell pepper, tomato, mushroom, and onion.

Mist a medium pan with olive oil spray. Set stovetop to medium heat. Cook, lifting the edges with a spatula as it starts to set and tipping the pan for uncooked eggs to run underneath, for 3 – 5 minutes. Fold omelet in half. Transfer to a serving plate. Top with salsa and sour cream. Serve immediately.
