This weight loss friendly salad can be customized by substituting whatever you’ve got in the fridge or other in-season vegetables such as asparagus, snap peas, spinach or mustard greens, tarragon and basil.

Ingredients
1 Bag | Â Birds Eye Steamfresh Veggie Made Penne |
3/4 Cup | Shredded Carrots |
1Â | Bell Pepper (or a few Baby Bell Peppers) |
1 Cup | Spinach |
2 | Oranges |
1/2 Cup | Extra Virgin Olive Oil |
1 Cup | Fresh Cilantro |
1 Tsp | Lite Salt |
1/4 Cup | Water |
1 Tsp | Dry Mustard |
1/2 Tsp | Minced Garlic |
1/2 Tsp | Crushed Red Pepper |

- Pop the pasta in the microwave, follow the directions on the package.
- Next, add zucchini and carrots to a bowl with about 2 tablespoons of water for 5 minutes.
- For pesto, peel and quarter one orange. In a food processor or blender combine orange quarters, olive oil, cilantro, water, salt, dry mustard, garlic, and crushed red pepper. Blend until well combine.
- Peel and chop remaining orange. Toss together pasta, pesto, chopped bell peppers, spinach and chopped orange.
*If desired, top with additional cilantro and orange peel.
