Weight Loss Friendly Garden Penne Salad

This weight loss friendly salad can be customized by substituting whatever you’ve got in the fridge or other in-season vegetables such as asparagus, snap peas, spinach or mustard greens, tarragon and basil.

Weight Loss Friendly Garden Pasta

Ingredients

 

1 Bag  Birds Eye Steamfresh Veggie Made Penne
3/4 Cup  Shredded Carrots
Bell Pepper (or a few Baby Bell Peppers)
1 Cup Spinach
2 Oranges
1/2 Cup Extra Virgin Olive Oil
1 Cup Fresh Cilantro
1 Tsp Lite Salt
1/4 Cup Water
1 Tsp Dry Mustard
1/2 Tsp Minced Garlic
1/2 Tsp Crushed Red Pepper

 

Directions 

  1. Pop the pasta in the microwave, follow the directions on the package.
  2. Next, add zucchini and carrots to a bowl with about 2 tablespoons of water for  5 minutes.
  3. For pesto, peel and quarter one orange. In a food processor or blender combine orange quarters, olive oil,  cilantro, water, salt, dry mustard, garlic, and crushed red pepper. Blend until well combine.
  4. Peel and chop remaining orange. Toss together pasta, pesto, chopped bell peppers, spinach and chopped orange.

*If desired, top with additional cilantro and orange peel.
